I cooked a turkey for Sunday dinner today and forgot to pick up rolls. I know if I were really "still" the creative type I would have baked rolls but that has yet to become a specialty. When I went to Alabama for family reunions biscuits were served at most meals. Biscuits were also a mainstay of my families dinner table when I grew up so I decided to mix some up. I didn't have any self rising flour so I google and ended up at allrecipes.com. This is the recipe I used substituting buttermilk for milk. (If you don't have buttermilk all you do is add a little lemon juice to your milk and let the milk sit before you begin preparing the recipe)I also cooked them on my pizza stone and next time would use a pan instead. I rolled them by hand rather than roll them out and cut them. Now, when I prepare them for my grandchildren I guess I'll have to roll them out because the only biscuit they know comes from McDonalds or from a can so they think it must be perfectly round (*smiles*). This recipe probably took about 8 minutes to prepare and have ready to go in the oven. Gesh, why was I stressing about needing rolls/bread and not having it when I could whip this recipe together in no time at all. In the time it's taken to write this post the biscuits are cooked. Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon white sugar
1/3 cup shortening
1 cup buttermilk
Directions
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.
