Cookie of the Day --- Can't Leave Alone Bars

This looked like a good simple recipe to me.  I can usually find cake mix on sale as a good staple for a recipe so I thought that alone made this a quick recipe to keep on hand.  Especially  for those times when family stops by and no treats are in the cookie jar.  The grandchildren would particularly enjoy the last step of the recipe.  "Dropping" teaspoons of cake mix.  Almost any age child could participate.  Even the toddlers.


Can't Leave Alone Bars
 
1 pkg. (18-1/4oz.) white cake mix
2 eggs
1/3 cup vegetable oil
1 can (14-oz.) sweetened condensed milk
1 cup semisweet chocolate chips
1/4 cup butter or margarine, cubed
     In a bowl, combine the dry cake mix, eggs and oil. With floured hands, press 2/3 of the mixture into a greased 13x9x2-inch baking pan. Set remaining cake mixture aside.
     In a microwave-safe bowl, combine the milk, chocolate chips and butter. Microwave, uncovered, on HIGH for 45 seconds; stir. Microwave 45-60 seconds longer or until chips and butter are melted; stir until smooth. Pour over crust.
     Drop teaspoonfuls of remaining cake mixture over top. Bake at 350 for 20-25 minutes or until lightly browned. Cool before cutting.
YIELD: 3 dozen bars.
